Using the pan frequently strengthens the non-stick coating, but it is also important to add a fresh layer of seasoning oil every now and then. To create the patina layer, heat the pan with a thin layer of Seasoning Oil until the pan begins to smoke. The patina layer that forms after frying has smooth, non-stick properties and forms a natural barrier between the air and the bare iron in the pan, acting as the first line of defence against rust.
